Autumn colour is produced by turmeric in the runner bean pickle. Make in a yellow casserole for maximum effect.
I do not grow runner beans. (These ones arrived in the box.) Since I have lived in the south of this island, and especially in its villages, I have wondered at the enthusiasm of my neighbours for growing runner beans. They all grow them. They all produce far more beans than they can eat – and who would want to eat them? – so they put them in plastic bags and leave them stealthily on other people’s doorsteps. Eventually I discovered the pickle and so I was saved.
Remember not to stir the pickle with a wooden spoon, unless you want a beautiful yellow wooden spoon.
